
Pouilly - Fumé
Domaine des Fines Caillottes


Grape variety: 100% Sauvignon blanc grape variety is used.
Terroirs:
- white limestone pebbles known as "Caillottes"
- marl with small fossilized oysters (Kimmeridgian marl)
- clay-limestone
- flint (Silex)
Vine growing:
- Tillage (plowing, hoeing, etc.)
- Debudding in spring to limit the number of bunches and to ventilate them.
- leaf removal in summer are carried out according to the terroirs and vintages.
Environment:
our wines are certified Terra Vitis (for respect of nature, Man and wines) and Hight Environmental Value (for respect of biodiversity and reduction of inputs).
Winemaking:
- partial skin contact maceration without stalks (only berries).
- very gentle pressing of the grapes.
- good sedimentation of the must for more elegance and finesse.
- fermentation and maturing in thermoregulated stainless steel tanks.
- maturing on fine lees, with stirring of these lees until Christmas, in stainless steel tanks.
- blending of the cuvées from our different terroirs in the spring before the first bottling.
Food-wine matches:
Our Pouilly-Fumé Domaine des Fines Caillottes is delicious by itself as an aperitif for example. It goes wonderfully well with seafood, sushi, fish, poultry, white meat and certain cheeses, particularly goats’…
Service:
Serve at around 10-12°C.
Ready to drink, for the 5 years following the harvest.

Domaine des Fines Caillottes 2024 :
A rich nose with citrus and yellow fruit notes (grapefruit, yellow peach, pineapple). These same aromas carry through to the palate, which is fresh, fruity, full-bodied, and beautifully balanced.
Domaine des Fines Caillottes 2023 :
Very expressive nose with aromas of citrus and exotic fruits (grapefruit, blood orange, pineapple, etc.). These same aromas carry through to the palate, which is rich, full-bodied, well-balanced, and very long.
